Date Night

Joe's friend was in town the other day & since they were hanging out, I ended up unexpectedly having the evening to myself. I had already started to make dinner when I got the call that Joe wouldn't make it home in time but that was ok. I was making a copycat recipe of Outback's Alice Springs Chicken and it was *amazing* to say the least. So flavorful - I ate the whole thing! If you make it, go easy on the seasoning salt, trust me. I also made a version of roasted baby potatoes - I tossed mine in eggwhites instead of oil - sound gross but tastes really good & is so much better for you than oil. They were awesome! I've only made them three times this week!

The picture does not do it justice - it was an excellent meal! I will definitely be making this again, soon! After dinner, I watched the movie You Again, it was predictable but cute - there were some funny parts that made me laugh.
Last night, we had a real date night. Joe got all dressed up - and by dressed up I mean he wore his new jeans with his chucks - so fancy, lol!
We went to the real Outback for dinner and had the best time! The restaurant was packed but the two of us ended up in a booth big enough for six people! We shared a steak so we could each save room to get a dessert! It was such a great time, I love spending quality time with my husband and eating good food that I didn't have to cook was a nice extra bonus!

It was such a fun night!

  2. hey blonnie. watching the news on the japan earthquake/tsunami. i know they issued a warning for hawaii and west coast usa. wanted to make sure you were okay. please let me know as soon as you can! praying <3
