I just realized it's Thursday and got really excited, time to post the thing's I'm thankful for!

The maintenance men came and re-seeded the yard! Woo hoo, we didn't have to do it ourselves! Thank goodness, they had all the right tools and were able to accomplish in a few hours, what would have takenus Joe a really long time. It makes my day to look out there - we have cd's strewn about, the garden house "snaked" through the yard, and a rake with a Hawaiian shirt acting as a scarecrow- all in an effort to keep the birds from eating the bird grass seed. It cracks me up! Our neighbors probably think we have lost our minds! We are well on our way to having a lawn we can actually enjoy!

I've been able to spend a lot of quality time with Joe this week - always a plus!! :) Oooo and he has a three-day weekend - Friday off! Double-bonus! Not that I don't love getting up with him at o'dark thirty but I never seem to go back to sleep once I'm up. Looking forward to sleeping in and then maybe exploring the island more! Who knows, maybe we'll find the set of "Lost"?!?

Friends - I have been blessed this week with an outpouring of love from my friends. Old and new, whether it's spending time with them, skyping, e-mails, phone calls or snail mail (all of these things happened this week) - each interaction has been so encouraging to me!!

Tried new recipes this week and so far all have been keepers! I am shocking myself with how well I am doing. I am more of a dishes kind of girl - meaning someone else cooks and I will happily do all the dishes. This arrangement served me well all the way through college, until now. Out of basic survival - neither of us want to starve or eat so much fast food that we weigh a gazillion pounds - I learned to cook. This week, I made a really good Honey Cashew Pork (without the Cashews) that was amazing, Chicken Cordon Bleu (the real way not the Houghton version of adding a piece of cheese and ham to the top of a grilled chicken breast), homemade GF pizza dough, made from scratch GF dinner rolls (kneading, giving time to rise, the whole nine yards = totally worth it- they were amazing!!!), a Beef golash recipe that was good. I astound myself every day - if you would have told me three months ago that I would learn to cook, I wouldn't have believed you, but alas here I am, not starving so I must be doing something right!

Stepping out in faith (again) and will be volunteering at the church! So excited to start doing that - the opportunity to meet new people and to serve -two things that I have been missing in my life!
***
Christmas music just started playing on the music player I am listening to! How random but it totally made me smile!

I'm still shocked that it's Thursday! Holy cow how is it possible that another week has gone by so fast?!? What are you thankful for this week?

I love that we were posting on our blogs at the same time despite the 5 hour time difference :) It made me smile when I got done posting and saw you had just posted.
ReplyDeleteOh and ps I am pretty sure you were told 3 months ago (by me) that you would have to learn to cook haha.
Um, if you really do find the set of Lost take a lot of pictures for me. I wish I could get there to find it myself before they wrap up.
ReplyDeleteCooking is one of those things that that more you do it, the easier it gets, so it is more enjoyable. Except for the select few who just down right HATE it.
But that isn't me. I use a million dishes, and then pull the I cooked you clean card! :-D
